The wood that smells like nothing else. Bursera graveolens — holy wood — grows across the dry forests of South America, and its smoke is sweet, resinous and warm, with something of citrus and pine underneath it.
It's the one people reach for who don't get on with sage. Where sage is sharp and herbaceous, palo santo is round and almost sugary — closer to incense than to burning herbs, and considerably easier to live with in a small room.
The wood needs time. It's aged after collection, and it's the ageing that develops the resin the scent comes from. Younger wood burns thin; well-aged wood burns rich.
Ours comes from Peru, through Faiza Naturals.
Light one end and let it burn for around thirty seconds, then blow the flame out and let it smoke. Rest it in a heatproof dish. It goes out on its own after a few minutes — and unlike a sage bundle, a single stick can be relit many times over.
Never leave burning wood unattended. Use a heatproof dish, keep away from soft furnishings, and open a window.
