Artisan Plant Based Pizza


Pizza Friday is a long standing tradition in many households, but what options are there for those with dietary requirements such as dairy, gluten free or vegans? Inspired by the newly launched Origins Café at Apothecary 27 this plant based Pizza is a satisfying, delicious and very easy.

This recipe uses a Thermomix, it is possible to follow the recipe using other powerful/high speed blender/mixer.


  1. Preheat oven to 180C.

  2. Place both flours, yeast and salt in the mixing bowl then mix 5secs/Speed4. Non Thermomix Mix by hand or use a mixer.

  3. Add water and oil then mix 10 secs/speed4. Non Thermomix: combine by hand or in an alternative mixer.

  4. Knead for 3min/dough function. Non Thermomix: In an alternative mixer attach dough hook and knead for the recommended time for pizza dough approx.. 8 mins, leave to rest for 2 mins then repeat for 6 mins.

  5. Tip out dough onto a floured surface and roll out into a circle approx.. 20 cm. Transfer to a prepared baking tray. Wash and dry mixer bowl to then prepare crumb topping.

  6. For the crumb topping place cashews, salt, garlic granules, mixed herbs in mixing bowl then grind 40 secs/speed 5. Non Thermomix: grind in a powerful blender till to the desired crumb consistency.

  7. Top Pizza with tomato puree/sauce and vegetables of choice. Top with reserved crumb, to taste. 

  8. Bake in oven for 10-15 mins at 180C.



50g gluten free flour I used Sorghum Flour

50g buckwheat flour

½ tsp dried instant yeast

2 pinches fine sea salt

4 tbsp water

2tdp olive oil


40g cashews nut

¾ fine sea salt 

¼ tsp garlic granules

½ tsp dried mixed herbs


3 tbsp tomato puree/sauce

Vegetables of choice thinly sliced,  I used courgette and mushrooms
