Mixed Berry Breakfast Sorbet

40g raw almonds

30g coconut flakes or rolled oats

25g seeds - pumpkin. sunflower, linseed, chia

30g tahini

250g ice

250g frozen mixed berries

250g frozen bananas, chopped in small pieces

40g pure maple syrup or honey

50g coconut yoghurt

30g sultanas

30g chopped nuts (we love pecans)

This is such a great ice cream or breakfast alternative for these hot summer days. It takes just minutes to put together and can be enjoyed by the whole family.

You can also try swapping out some of the ingredients for alternatives to match your taste!

 

THIS RECIPE USES A THERMOMIX, HOWEVER IT IS POSSIBLE FOR IT TO BE MADE USING A BLENDER. MIXING TIMES WILL NEED TO BE INCREASED.

1. Toss raw almonds/macadamias/cashews, rolled oats or quinoa flakes, seeds, tahini, sultanas and ice in to your thermomix (or blender), and grind on speed 9 for about 30 seconds, using the spatula to assist.

IF USING A BLENDER. CRUSH ICE AND PUT ASIDE. GRIND ALMONDS, CASHEWS AND MACADAMIA FIRST. ADD TAHINI, SOAKED SULTANAS AND CRUSHED ICE. CONTINUE GRIND UNTIL WELL COMBINED.

2. Add the berries and grind them on speed 9 for 15 seconds.

3. Add the remaining ingredients and continue to grind on speed 9 until for about 2 minutes.

4. For extra yumminess, add some extra sultanas, goji berries of chopped nuts and stir on speed 3 until well mixed in, or sprinkle them on top.
